It's cold and you are always on the go and with temperatures dipping to single digits as dusk falls, one might consider dishing out a bowl of soup. Firstly, You can hardly go wrong with this healthy choice and secondly, it is an easy way to save time and money. Having to combine various ingredients in a large pot to create a nutritious, filling, and easy to digest meal will put a smile on your busy lives. One would be glad to know that most vegetable soups are packed with vitamins and minerals such as vitamin A, E, B6, thiamin, niacin, potassium, copper and manganese. Keen foodies may want to experiment with the pot by adding different types of vegetables for taste.

Recipe for one:

Ingredients-

  • 1 teaspoon olive oil

  • 1/2 leek, white part only, chopped

  • 1 small potato, peeled and chopped

  • 1 small zucchini, chopped

  • 1 tablespoon thick cream

  • 1 teaspoon massel stock powder

  • Salt and freshly ground black pepper, to taste chopped fresh chives, to garnish crusty bread, to serve

Method-

  • Heat oil in medium size saucepan

  • Add leeks and cook until soft

  • Add potatoes, zucchini and stock

  • Simmer with lid on until vegetables are tender

  • Add half cup water

  • Blend until smooth

  • Let soup simmer for 3-4 mins before serving

  • Add salt, pepper, cream and top with fresh chives and crusty bread

Cooking:15-20mins
