Chia Pudding Breakkie

Summer is here! Start your day right with all goodness in a bowl. High in vitamins, magnesium, omega 3s, protein and fibres. Mix ingredients, pop it in the fridge and look forward to a wholesome treat the next day!

Ingredients:

  • 50g chia seeds

  • 1 young coconut, water removed and flesh chopped or alternatively pre packed coconut water

  • 4 tablespoon Greek yoghurt

  • 1 cup fresh strawberries, raspberries, blue berries and kiwi

  • 5 tablespoon fresh milk

  • Dates and favourite nuts and seeds to serve

  • Raw honey comb to serve

  • coconut shavings to serve

Method:

  • Add chia seeds, coconut water, berries and coconut flesh in to a small jar. Leave over night in fridge.

  • Add yoghurt in small amounts and mix through. If its dry add a splash of milk. Mix till you reach a desired consistency.

  • Dish into a small glass and add toppings (For a nicer presentation, layer toppings and pudding alternately.
