Superfood Sandwich


On the go? In-between fixtures in a day competition? Need a post game snack? This superfood sandwich could be an add on to your food list.

Ingredients:

  • 2 x Slice Wholegrain Bread

  • 1 x Cup Kale

  • 2 x Egg Scrambled

  • Almond Spread

  • 2 x Table spoon Coconut Oil

  • 1 x Avocado

Method:

  • Wash and spin dry kale

  • Heat pan on medium heat and add coconut oil and kale

  • Sauté kale for 3-5 minutes before adding eggs

  • Even out kale and egg and cook for another 2 minutes

  • Toast bread and add almond spread

  • Add kale/egg and avocado and serve
